When my mom was asking me what I would be bringing to the Labor Day picnic, I obviously said cupcakes, and asked my dad what kind he would like. He said chocolate chip, but later found out that my cousin will be making a chocolate chip cake, so I didn’t want to do cupcakes as well.

I ended up making them for our last crab feast before school starts back up, which we had last week. Crab, corn, and cupcakes — what could be better?!

I found the recipe on How Sweet It Is (whom I absolutely adore her posts and recipes!), and after reading the blog post associated with these delicious cupcakes, I almost had to pick my jaw up off the ground! I made a double batch, because I wasn’t too sure how many people were coming (and it’s a good thing I did!) and after putting the first batch in the oven, I realized I had never added the vanilla! I added it to what was left in the mixer and made them. No one could tell the difference, thankfully.
